The Dimtu washing station sits at the top of the Guji zone, where heirloom Kurume trees grow under old-growth shade. Cherries are picked over three passes, floated the same afternoon, and fermented for 36 hours before hitting the raised beds.
We have bought from the same producer group for four consecutive harvests — and pay a fixed premium over the C-price, agreed before picking begins.
